All the talk of the last decade has been about avoiding the sun and avoiding skin cancer. We slather ourselves with sunscreen full of chemicals and think we are doing the right and prudent thing. After all, who wants prematurely aging skin and melanomas?
Now many health advocates are questioning the safety of total sun avoidance, and study after study now point to the importance of sun exposure and vitamin D. A lack of sunlight can put you at risk for a vitamin D deficiency, and increase your susceptibility to a number of diseases-many of them life-threatening.

So the dangers of skin cancer and sunscreen versus the benefits of the sun and vitamin D, leave the average American confused about the contradictory messages. Avoiding the sun altogether will protect the skin from aging and some skin cancers, but lead to deficits in vitamin D, which leads to other serious health issues including cancer, heart disease, autoimmune diseases, and depression, to name just a few. Fried Green Tomatoes with Thyme Essential Oil
6 large green tomatoes
1 tsp. paprika
1/2 C. blue cornmeal
1/4 tsp. cayenne pepper
1/4 tsp. sea salt
1 C. rice or goat milk
1 TBS. fresh parsley, finely chopped
1 drop Young Lliving Thyme essential oil
1 tsp. olive oil
Mix all ingredients (except tomatoes, milk, and olive oil). Dip sliced tomatoes in milk. Coat with cornmeal mixture. Cook in a sauté pan with olive oil until tomatoes are crisp on the outside. Makes 6 servings.

Since the age of 12, upon hearing Ralph Nader on the radio (mid 1960s) speaking about pesticides and processing of our food I took on what would be a lifelong hobby for me – keeping up on what exactly is happening with our food. When I heard Ralph Nader speaking on my nifty little Panasonic clock radio that day it forever changed the way I see government, the FDA, USDA, and a host of others who I had, up until then, naively believed were agencies and people looking out for us, looking out for “our” health and well-being.
I was shocked! I could hardly wrap my young brain around “why” the people who did have control, say so over what happens, and what doesn’t, were not even interested in protecting “us” from things that can make us sick, diseased, and cause us to die prematurely. As children, I believe we need to know that we are being protected in the right ways, not some of this silly type of protection that’s so common today (which oftentimes seems so superficial compared to what should be done). Lemon Herb Vinaigrette with Young Living Essential Oils
Juice of 3 fresh lemons
Zest of one lemon
1 cup of Extra Virgin Olive oil
2 T of Shallot, minced
1 clove garlic, minced
1 drop Young Living Essential Oil (you may use Peppermint, Orange, Dill, Basil, Rosemary, Sage, Mountain Savory, Thyme)
Salt and Pepper
Fresh Parsley (or herb of choice that complements) optional
1 – 2 TBLS of Young Living Blue Agave to taste
In the order of the ingredients list, add them to your mixing bowl, being sure to stir well. Drizzle on tossed green salad. Delicious!!!

I’ve never seen this cut of steak, Flatiron, anywhere except at US Wellness Meats – which is where we buy all of our meats. If you don’t have a local source for grass-fed meats, try these guys – excellent! Grass-fed makes a HUGE difference in flavor and greatly enhances nutritional value. The Flat Iron Steaks are very reasonable too!
Grilled Flatiron Steaks with Thyme Marinade
2 Flatiron steaks (17 ounces)
2 TBS. olive oil
1 drop Young Living Thyme or Rosemary essential oil
1 tsp. fresh parsley
2 garlic cloves (crushed)
1/4 cup cabernet sauvignon wine
1/2 tsp. dry mustard
generous amount fresh ground pepper
celtic sea salt to taste
Mix all ingredients thoroughly and marinate flatirons for one hour.
For maximum tenderness:
Grill over hot coals for a short 4 minutes per side.
Or, grill low and slow (on a lower heat) for 45-60 minutes.

Crushed Ice
Fresh Strawberries
1 -2 oz. NingXia Red Juice
Blue Agave to taste (learn more about Blue Agave)
1 drop of Young Living Tangerine essential oil (per 2 cups for zing)
Puree strawberries, mix in equal portion of crushed ice, add tangerine oil. Enjoy.

Since the introduction of GM crops in the United States, more than 120 million pounds of additional pesticides have been used. 85 percent of all GM seeds are engineered for herbicide tolerance, most of these being Monsanto’s “Roundup Ready” cotton, corn, soy, and canola seeds. This allows plants to withstand the significant amounts of pesticides being sprayed on them, in effect promoting pesticide use.
This particular variety of GM crop (Roundup Ready) became so popular because it allows farmers to spray Monsanto’s Roundup herbicide directly onto their fields without harming the crops. As you might imagine, the use of Roundup herbicide has increased dramatically since the GM Roundup Ready crops were introduced — a double win for Monsanto.
Andrew Kimbrell, Center for Food Safety, says, “what’s remarkable about this is that these are the scientists working inside the FDA and when the political appointee’s at the top said ‘no testing, no labeling’ they say where is your science, why didn’t you listen to our science? This is excellent! So much better tasting than bottled pop. Using Agave as the sweetener makes this beverage low-glycemic too.
Italian Vanilla Cream Soda
1/2 a tall glass of natural, sparkling water
Tiny splash of *vanilla extract (1/4 tsp. or less)
1/2 TBS. Blue Agave (learn more about Blue Agave nectar)
1/2 a glass of fresh raw milk (goat or cow) (raw milk contains enzymes)
Fill a tall glass halfway full of natural, sparkling water. Add a tiny splash of vanilla extract. Add Agave. Stir well, but slowly to avoid quick fizzing up and overflowing glass. Slowly, in stages, top off with raw milk and stir gently.
* May use cherry juice concentrate in place of vanilla extract, depending on personal taste.

When we talk about skin, we usually think about the epithelium, the covering of our bodies. But skin can also be the endothelium, which is the “skin” that lines our arteries and they’re essentially the same type of cells that do the same things. And, when they’re injured they secrete pretty much the same chemicals.

Our bodies, containing some ten trillion cells, has to coordinate their communication and when there is a breakdown in that coordination things can go awry and cause disease – it’s always the communication that needs to be corrected, i.e., the fixing of the instructions is what we want to deal with ultimately.
If our external skin, heart, arteries, kidneys, brain, etc. are related and can produce the symptoms of the underlying disease of aging, it’s good to take a look at the mechanisms that have to do with nutrition and what we allow our bodies to be exposed to. Aging can be slowed down. Studies over the past ten years in many different species of animals have shown that the rate of aging can reduce the rate of aging by 10, 20 and up to 400% – amazing! And, we know that this is done through nutrition, mechanisms that relate to insulin, leptin, and nutrition.The symptoms of aging are wrinkled skin, heart disease, diabetes, osteoporosis, arthritis, etc. all of which are related to the rate of aging.
The OCA (Organic Consumer’s Association) web forum is an online community of like-minded people sharing thoughts about the wide variety of topics you regularly read about in Organic Bytes or on the OCA website. The web forum now has over 4,500 members and nearly 10,000 posts. One of those recent posts was from a user named Tedalan on Silk Soy Milk Packaging Scam:
“I was very involved in the creation of Silk Organic Soymilk when it was first designed and manufactured. Steve Demos was very committed to Silk being Non-GMO, Organic and Vegan. Suddenly, when buying Silk at Whole Foods, I discovered that none of the Silk flavors in half gallon containers were certified organic. The cartons look exactly the same as before with the exception/removal of the USDA Organic Seal and the word “organic” before soybeans in the nutritional panel.
This is a very sneaky way for a manufacturer to discontinue Non-GMO Organic soybeans in the manufacture of thier product. I also wonder why Whole Foods continues to sell this product without a “warning sign”. Tedalan

Allergies, degenerative and infectious diseases are related in their causes, a supressed immune system. Cranberry-Orange Muffins with YL Essential Oils
1 c. dried cranberries
2 large eggs
c. fresh orange juice
2 c. rice flour
¼ c Young Living Blue Agave
2 tsp. baking powder
1 tsp. grated orange zest
¼ tsp. fine salt
6 drops Young Living orange essential oil
½ c. almond milk
½ c. butter
Preheat the oven to 375 degrees F. In a saucepan, combine the cranberries and orange juice and bring to a simmer over medium heat. Turn off heat and let cool. With an electric mixer, mix agave, orange zest, orange oil and butter until smooth. Add eggs and mix well. Fold in 1 cup of flour, baking powder, and salt.
Next, stir in milk and add remaining cup of flour. Gently fold cranberries into mixture. Lightly coat a 12-muffin tin with butter or line with paper baking cups. Put a heaping tablespoon into each tin/cup. Bake for about 10–15 minutes or until just barely golden brown. Serve warm with agave-butter. Makes 24.
